Cold Brew “Crystal” Recipe

Hey, cold brew lover!

Before you read any further, I just want to warn you, this post is nothing like the usual recipes I post here. I usually post recipes I am satisfied with, or recipes I feel that I can recommend. This is none of those. This “recipe” is the result of a failed attempt to create a new unique flavor experience. But, even though I can’t recommend you to try this recipe, I thought it would be worth to share it. Maybe it can create some sort of inspiration for somebody of you to try and experiment with new recipes. I hope you like it.

 

The Idea Behind The Recipe

Cold brew is most often served black or with milk foam. What’s nice with a milk foam is that it brings some sweetness and milkiness to the cold brew. However, in my and many other’s opinions, the milk sometimes (or often) get’s a bit overpowering. So, a couple of weeks ago, I came up with a completely new recipe for what I call “Air Foam”.

The air foam recipe I made that time was made out of even more cold brew coffee and a little splash of milk. It gave the cold brew some different textures and taste without overpowering the cold brew itself. However, I wanted to try to incorporate some extra sweetness this time, so what I tried to make was a foam out of basically only two things, water, and sugar. Since it was meant to be a foam, it wouldn’t only add sweetness but a different texture as well.

 

 

The Result – Jelly?

But, as you can see in the photo, there is no foam. I failed. The problem with making a foam out of sugar and water is that the liquid you get from mixing these two ingredients isn’t really easy to foam. Nothing in that mixture would naturally just foam. So, I had to add some gelatin to increase the thickness of the liquid. This was where everything went wrong… I must have missed something when measuring the different ingredients. Because, instead of foam, I ended up with some sort of sweet jelly looking like crystal.

Not much to do about that, so I decided just to try to add the jelly to the cold brew. I hoped that it could become something like bubble tea, which is so popular in Asia. However, it didn’t taste good at all. At least not if you ask me. The sweetness didn’t make sense for me in this form, and the texture of jelly isn’t something I like with my cold brew. But, at least I gave it a try, and it was quite fun to try it. After all, coffee should be fun and exciting, not boring or snobby.

Ps. I will definitely try to succeed with the sweet foam in the future. Stay tuned.
