A couple of weeks ago, I posted a failed recipe, Cold Brew “Crystal”. That was the result of an attempt to make a sweet, cold foam recipe without any milk at all. So, today, after a couple of weeks of recovering from this failure, I did attempt a new version of the recipe, and it succeeded! The result is a delicious cold brew topped with a sweet and not at all overpowering air foam – and it is vegan*, easy to make, and simply delicious.
*There is gelatin in this recipe, but if you want it to be vegan use a substitute – like agar agar or pectin.
Why make a foam without milk?
The reason for me to even try this recipe in the first place was to find a recipe where you could get the sweetness from a cold foam without the milk. That is because milk can be too overpowering for the very smooth cold brew coffee. This might also be a very nice solution for anyone with a milk allergy, or people following a vegetarian or vegan diet. If you want to add a sweetener to the coffee, you could, of course, just blend it with the cold brew. However, the contrast you get from foam and the coffee is something many prefer (me included).
What coffee to use for this vegan cold brew drink?
You can use any coffee you like for your cold brew. I used DripBeans freshly roasted Chocolate Dreams this time since I thought it would be nice to add some chocolate flavor when the foam is without any additional taste. The result was fantastic! Use whole beans if you can, but ground coffee works excellent as well (I actually used ground coffee this time).
Equipment needed for this recipe
To make this recipe, you’ll need a whipped cream dispenser. This might seem like an expensive investment if you don’t already have one, but they are amazing! You can make so much more than just toppings for coffee with these, for example, nitro cold brew, dessert foams, insert flavors into liquor, and much more. Also, after loading a whipped cream dispenser with foam, it can stay in the fridge for days, ready for you and your cold brew whenever you need it.

Sweet Foam Cold Brew Coffee
Equipment
- Whipped cream dispenser (for the foam)
- Cold brew maker or similar
Ingredients
The Cold Brew Coffee
- 32 oz Water
- 2 oz Coffee beans (or ground coffee)
The Sweet Foam
- 9 oz Water
- 5 oz Sugar (or other sweetener)
- 3.5 g Gelatin (powder or leaves)
Instructions
The Cold Brew Coffee
- Start by brewing the coffee. Grind the coffee to a course grind size and add it to your cold brew maker. Then add the water and make sure all the coffee gets wet.
- Put the coffee in the fridge and let it brew for 12-24hrs. Then, filter out the coffee grounds from the cold brew. Done!
The Sweet Foam
- If you are using gelatin leaves, put them in a cold water for 5min.
- Heat up the water together with the sugar. When the sugar is dissolved, add the gelatin and make sure it dissolves as well.
- Fill your whipped cream dispenser with the sweet liquid and close it. Load the dispenser with a charger, and by turning the charger handle, release the charger contents into the liquid. Put the dispenser in the fridge and let the liquid/foam cool down.
Serving
- Fill a glass with cold brew and ice. Take the dispenser and shake it carefully, then add the foam on top of the cold brew coffee. Enjoy!
